We thought it would be a fabulous idea to share recipes with one another. If you have a tried and tested recipe that you love, why not share it with us?

We'll start the ball rolling with a tasty afternoon treat.

Oat Date slice
  • 150g 5oz chopped dates
  • 60ml cold water
  • 25g 1oz sugar
  • 1 teaspoon vanilla extract
  • 185g 6oz self-raising flour
  • 150g 5oz butter or margarine
  • 100g 4oz rolled oats
  • 150g 5oz sugar

Always good to share, looking forward to this thread being well supported....


Spelt is NOT gluten free, but may!! be tolerated by many who are Wheat intolerant.

1lb 2ounce(510grams) Spelt flour
Large tub yoghurt(450/500g)(Later experiment with flavoured i.e add a few berries etc.)
1 Teaspoon Bicarbonate of soda
pinch of salt
1 teaspoon sugar or honey(optional)
Put Yoghurt in Mixing Bowl sprinkle in the Bicarb, should go frothy
then stir in the Flour

Should be like dough, make into balls or pat dough and use cutters(Like for scones)
Bake in hot oven 200 about 8 to 12 mins  should rise to almost double.
Do remember NOT for anyone who MUST have Gluten free.
P.S this recipe was given to me via word of mouth, so have no way of verifying originator.

The scones sound delicious Kate - I might give them a try over the weekend!! If anyone else has any other good recipes they would like to share we'd love to hear about them!

Awh!!! was really looking forward to reading lots of new recipes, surely some of our members do manage to cook or prepare some interesting and tolerable recipes.
Would be lovely to discover something to help with our dreadful dis-ease.

Here is another one Grannys Shortbread biscuit.... adaptable to whatever you have to hand and the bladder can tolerate...

(in old money LOL)

Pre Heat.Elec..150 towards top

2.oz oats
4.oz Strong Brown Flour ( or Granary etc)
6.oz Strong White flour.( EDIT   now using Spelt Flour)
1 to 2 oz caster sugar(I use golden)
8 oz. I use 'clover' ( but again whatever)

Rub all in a large bowl, till you can make a ball.
Lightly flour a board and roll out not too thin and not to thick, cut with cutters or into oblongs.
Place on baking tray.Prick all over.

Bake approx 30 mins till nicely browned, leave on tray to cool,  sprinkle llightly with caster sugar as soon as they come out of oven.

Enjoy.Grandson thinks these are awesome Bless him!!!!!!

Leek and Potato soup

Boil/ Microwave or use any leftover Potao
Handful of Chopped Leeks Boil/Microwave.
Flavour ( if you can without upsetting the bladder)Half to 1 cube of Organic chicken ,
Black pepper.

Whizz all in blender.
This should give a nice thick'ish soup, but if you need to thicken I use ( Potato flour)

Again as with most of my cooking (Known as A La Kate)
you can enrich by substituting Water for all Milk or Milk and Water, even being very (naughty but nice)adding some Cream

White Chocolate Muffins

275g plain flour
1 level teaspoon baking powder
2 large eggs
75g caster sugar
225ml milk
110 margarine
1 pack white chocolate chips

Pre-heat oven to Gas 6 or 200 degrees C
Put paper cases in the muffin tins
Sift flower and baking powder on to a plate
Crack eggs in to large mixing bowl and mix with a fork
Add milk and sugar to the beaten eggs and stir until mixed
Melt margarine gently in a saucepan or in the microwave and add to the eggs milk and sugar in the mixing bowl.
Sift flour and baking powder into the mixing bowl. Fold ingredients carefully using metal tablespoon for about 15 secs. Mixture might look lumpy but this ok
Add the white chocolate chips and fold in quickly
Spoon mixture into 12 paper cases - each should be about two thirds full
Bake for 20 - 25 minutes until well risen and spongy.
Cool in tins for 5 minutes then lift them on  to a wire cooling tray.

Does anyone have a totally sugar free, gluten free cake or bun recipe that turns out well. Or a shorbread or similar cookie type food which is sugar free and gluten free.  I have tried making up some of my own cakes or buns using gluten free bought flour, butter, eggs and a little raw apple just to add a bit of sweetness. They weren't that nice which is why I would not want to post them on here - they were very eggy (only using 2 eggs) and very hard and heavy.  Just feel its really important that with IC no sugar is involved in recipes and gluten out as well.

There are recipe books of "free from" which often have egg free, dairy free, gluten free in them but every recipe is packed with sugar which does not make sense to me when you are trying to heal the gut.

Hi icy
Try my shortbread above....omit the sugar....
Vary the different flours as they do not need to rise you could possibly and potentially use any combination....

but as you know without ANY sugar, it will be an acquired taste.Fortunaely I can accept a small amount of sugar...
I wonder if you added some chopped up dates....

Do post back if any success...

Thanks Kate. I'm still trying to perfect a cake using no sugar at all. Will post if I get anywhere ! I'll try some shortbread though I think that without sugar would be difficult - I can't tolerate sugar at all unfortunately or at least only in the tiniest amount.

Hi Icy. Are you able to tolerate unrefined sugars at all?

I'm just looking for some recipes for you. I've come across a blog of someone who is living a sugar-free and gluten-free life but she still seems to include palm sugar in her recipes. Will investigate some more recipes for you.

Hello Morag,

I really react badly to any sugar, upset stomach, diarrhoea,  I get itching nose,itching skin,  sneezing and later on bladder probs. All part of an immune reaction I suppose.

I've not heard of palm sugar but assume it would have the same reaction. I tried Xylatol once and had the same reaction - however I discovered that Xylatol is made from birch bark and I am highly allergic to birch pollens! - shame.  Not tried Stevia though - but not sure what it is made out of.  I think a lot of the sugar substitutes are made out of tree barks.

150g walnuts

200g ground almonds (Waitrose)
1 level tablespoon molasses (can add more/less to taste)
Toasted almond flakes (Waitrose)
4oz (or so) dates
Hot water (small amt)
1 teaspoon vanilla extract


Chop dates, remove stones
Add to small amt hot water in small bowl

Add molasses & vanilla extract 
Mix well
Break walnuts into smaller pieces
Put in large bowl, add mixture
Add ground almond little by little, stirring well
Butter/oil flat tin
Push mixture in, flatten
Add toasted almond flakes on top
Preheat oven to 180C (fan oven)
Bake at 180C for 14mins
Remove from oven, leave for 2 mins
Cut while still warm into pieces
Remove to a plate

PS. Can add an egg for more cohesive texture but will need more cooking time and will  produce a more moist flapjack.
Can reduce/increase the sweet ingredients - dates & molasses - to taste and tolerance,
I use less when baking for myself but increase when baking for others.
If you break up a flapjack and 'toast' it under the grill for a few mins then u have a delicious 'granola'.

Eva, you have no idea how much I love flapjacks! I don't know if it would agree with me but it sounds like a great recipe.
Suffers from IC, BC and overactive bladder.
